Tzatziki
Ingredients
1/2 cucumber, seeded
1.5 cups plain Greek yogurt
3 garlic cloves, minced
2 tablespoons olive oil
1 tablespoon champagne vinegar
1/4 lemon
1/2 teaspoon sea salt
2 tablespoons fresh dill, minced
Directions
- Seed the cucumber to remove insides and then finely chop the cucumber. Place chopped cucumber in a paper towel lined bowl. Sprinkle with salt. This will help release moister from the cucumber. Periodically, press a paper towel into the cucumber to soak up with moister.
- Combine the yogurt, garlic, olive oil, vinegar, squeeze lemon, and salt in a bowl.
- After the moister is released from the cucumber (about 15 minutes) add to the yogurt mixture along with fresh dill. Stir to combine.
- Refrigerate for at least 30 minutes, ideally overnight to allow flavors to blend. The garlic flavor in the tzatziki will become stronger as it sits.
- Drizzle tzatziki with olive oil before serving.
