Smokey Halibut with White Beans & Greens
Ingredients
- Smokey White Beans & Greens
1/4 lb chorizo, ground
1 sweet onion, chopped
2 garlic gloves, mined
2 tablespoons smoked olive oil
1 tablespoon smoked paprika
1 red chili, seeded and thinly sliced
1 can cannellini beans, drained
kale
Brussels sprouts, cut in halves
Shiitake mushrooms
Vegetable broth
Salt & Pepper
- Halibut
1 lb halibut, skinless
olive oil
Sea Salt
Pepper, freshly ground
Directions
- Smokey White Beans & Greens
- Heat a pan with high sides over medium heat. Add ground chorizo and sauté until cooked through.
- Add sweet onion, garlic, smoked olive oil, paprika, and red chili and cook for a couple minutes, until onions are just translucent.
- Add cannellini beans, Brussels sprouts, mushrooms and kale. Season with salt and pepper.
- Add vegetable broth throughout cooking processes until desired thickness.
- Halibut
- Season halibut filets with salt and pepper.
- Heat a pan over medium-high heat. Add just enough olive oil to cover the base of the pan.
- Cook halibut for 3-4 min on each side.
- Serve on top of White Bean & Greens.
