  • Preheat oven to 375 degrees.
  • Cut rainbow carrots and Brussels sprouts in half. Coat veggies in olive oil and salt.
  • Roast until desire crispness; approximately 20-25 minutes.
  • Top with roasted pistachios, thyme, and homemade mustard tahini sauce.
