Rich Cocoa Brownies

Ingredients

  • 1.25 cups sugar

  • 3/4 cup all-purpose flour, sifted

  • 2/3 cup dutch cocoa powder (or any quality cocoa), sifted

  • 1/2 cup powdered sugar, sifted

  • 3/4 teaspoon sea salt

  • 1/2 cup chocolate chips (dark or milk)

  • 2 eggs

  • 1/2 cup olive oil

  • 2 tablespoons water

  • 1/2 teaspoon vanilla

Directions

  • Preheat oven to 325F
  • Lightly spray an 8×8 glass baking pan
  • In medium bowl, combine sugar, sifted flour, sifted cocoa powder, sifted powdered sugar, salt, and chocolate chips.
  • In another bowl, whisk together the eggs, olive oil, water, and vanilla.
  • Fold the dry ingredients into the wet ingredients. Do not over mix.
  • Pour batter into pan and smooth the top.
  • Bake for 40-50 minutes; until toothpick comes out ‘almost’ clean.
  • Cool completely and let set. It takes a couple hours to for these brownies to set up.

Notes

  • For me, it’s all about the cocoa. My favorite is Dutch Coca from Savory Spice (https://www.savoryspiceshop.com/herbs-spices/cocoa-powder-dutch.html)
  • Add some peppermint extract if you want peppermint brownies. Great for holiday time!
  • If you want a more rich brownie, add milk chocolate chips!
