Rich Cocoa Brownies
Ingredients
1.25 cups sugar
3/4 cup all-purpose flour, sifted
2/3 cup dutch cocoa powder (or any quality cocoa), sifted
1/2 cup powdered sugar, sifted
3/4 teaspoon sea salt
1/2 cup chocolate chips (dark or milk)
2 eggs
1/2 cup olive oil
2 tablespoons water
1/2 teaspoon vanilla
Directions
- Preheat oven to 325F
- Lightly spray an 8×8 glass baking pan
- In medium bowl, combine sugar, sifted flour, sifted cocoa powder, sifted powdered sugar, salt, and chocolate chips.
- In another bowl, whisk together the eggs, olive oil, water, and vanilla.
- Fold the dry ingredients into the wet ingredients. Do not over mix.
- Pour batter into pan and smooth the top.
- Bake for 40-50 minutes; until toothpick comes out ‘almost’ clean.
- Cool completely and let set. It takes a couple hours to for these brownies to set up.
Notes
- For me, it’s all about the cocoa. My favorite is Dutch Coca from Savory Spice (https://www.savoryspiceshop.com/herbs-spices/cocoa-powder-dutch.html)
- Add some peppermint extract if you want peppermint brownies. Great for holiday time!
- If you want a more rich brownie, add milk chocolate chips!
