Quick Pickled Vegetable

Ingredients

  • 1 teaspoon olive oil

  • Vegetable of Choice, Sliced (onion, cucumber, broccoli, fennel, jalapeño, carrots, etc)

  • Salt for seasoning

  • 1/2 cup vinegar (champagne vinegar, apple cider, etc)

  • 1/4 cup water

  • 1/2 teaspoon sugar (or sugar replacement)

  • Spices depending on dish (oregano, mustard seeds, coriander seeds, fennel seeds, star anise, black pepper etc)

Directions

  • Heat olive oil in a medium saucepan over medium high heat until shimmering.
  • Add vegetable, sprinkle with salt, and sauté, stirring constantly, for 30 seconds.
  • Remove from heat and add vinegar, water, sugar, spice and season with salt
