Quick Pickled Vegetable
Ingredients
1 teaspoon olive oil
Vegetable of Choice, Sliced (onion, cucumber, broccoli, fennel, jalapeño, carrots, etc)
Salt for seasoning
1/2 cup vinegar (champagne vinegar, apple cider, etc)
1/4 cup water
1/2 teaspoon sugar (or sugar replacement)
Spices depending on dish (oregano, mustard seeds, coriander seeds, fennel seeds, star anise, black pepper etc)
Directions
- Heat olive oil in a medium saucepan over medium high heat until shimmering.
- Add vegetable, sprinkle with salt, and sauté, stirring constantly, for 30 seconds.
- Remove from heat and add vinegar, water, sugar, spice and season with salt
