Lobster Roll

After our trip to Park City, UT we craved Freshie’s Lobster Rolls. Yes… Lobster Rolls in Utah. But we learned that the secret is high quality, Maine Lobster! Freshie’s has their Maine Lobster flown in every day from Maine. So when we got home… that is exactly what we did.

I recommend lobster meat from LobsterAnywhere.com – Get the 2 lbs of cooked tail, claw and knuckle lobster. You’ll have leftovers! (Do NOT get the Lobster Roll Package. It is a better deal to just get the lobster meat)

Ingredients

  • 1 lbs of cooked tail, claw and knuckle lobster meat (reserve the other 1 lb for tomorrow!)

  • 1 tablespoons of good quality salted butter

  • 1/4 cup Duke’s mayo

  • lemon juice from about 1/4 lemon

  • 2 tablespoons fresh chives, chopped

  • salt and pepper, to taste

  • high quality top split buns (I prefer Broiche Hot Dog Buns from Whole Foods)

Directions

  • In a medium glass bowl, combine mayo, juice from 1/4 lemon, chives and salt & pepper to taste.
  • Heat a light metaled sauté pan over low heat. (Make sure it isn’t a dark metaled pan because you don’t want to brown the lobster).
  • Add about 1 tablespoons of butter to the Pan. Once melted, add the lobster. (Remember you are just lightly warming up the lobster. The lobster meat is already cooked so you do not want to over cook it.)
  • Once warmed through, add the lobster and butter to the mayo mixture.
  • Heat a dark sauté pan (ie cast iron) over medium heat. Add a small amount of butter and then grill all sides of the hot dog buns.
  • Stuff the bun with the lobster meat, top with extra chives & enjoy!
