Citrus Spring Onions & Carrots

Ingredients

  • Spring Onions

  • Rainbow Carrots, peeled

  • 2 Pink Lemons

  • Fennel Seeds

  • Sea Salt

  • Pepper

  • Olive Oil

Directions

  • Preheat oven to 375 degrees.
  • Layer spring onions and carrots in baking pan. Coat vegetables lightly with olive oil.
  • Season with fennel seeds, sea salt, pepper, and lemon zest.
  • Slice lemons and place on top of vegetables.
  • Roast in the oven for about 20 minutes, or until desired softness.
