Citrus Spring Onions & Carrots

Spring Onions
Rainbow Carrots, peeled
2 Pink Lemons
Fennel Seeds
Sea Salt
Pepper
Olive Oil
Directions
- Preheat oven to 375 degrees.
- Layer spring onions and carrots in baking pan. Coat vegetables lightly with olive oil.
- Season with fennel seeds, sea salt, pepper, and lemon zest.
- Slice lemons and place on top of vegetables.
- Roast in the oven for about 20 minutes, or until desired softness.
