Chimichurri

Chimichurri

Ingredients

  • 1/4-1/2 cup olive oil

  • 1.5 tablespoon red wine vinegar

  • 1/2 cup finely chopped parsley

  • 4 gloves garlic, minced

  • 1 small red chili, finely chopped

  • 1 teaspoon dried red chili flakes

  • 1/2 teaspoon dried oregano

  • 1 teaspoon sea salt, course

  • 1/2 teaspoon black peppercorn, course

Directions

  • Finely chop the parsley, garlic, and red chili. Do not use a food processor.
  • Mix all ingredients together in a bowl.
  • All to sit at least 10 minutes (ideally longer) to all the flavors to come together.

Notes

  • We do not like our chimichurri very oil based. You can add more oil if you do.
