Billy’s 5-Star Meatloaf
Best paired with a bottle of Cakebread Cabernet Sauvignon.
Ingredients
- Meatloaf
1/2 lb Ground Beef
1/2 lb Ground Buffalo
1/2 lb Ground Veal
1/4 lb Italian Sausage, hot
3 cloves garlic, minced
1/2 c mushrooms, roughly chopped
1/2 c jalapeño, seeded & chopped
1/3c fresh parsley, chopped
1/2 c green onion, chopped
1 egg
salt & pepper, to taste
2 tablespoons crushed red pepper
worcestershire sauce, to taste
2-4oz aged cheddar, sliced
- Ketchup-Sriracha Topping
1/2c ketchup
1/4c sriracha
1/2 tablespoon worcestershire sauce
salt & pepper, to taste
Directions
- Preheat oven to 350 degrees.
- Combine buffalo, beef, veal, and Italian sausage. Mix until evenly combined.
- Add minced garlic, mushrooms, jalapeño, parsley, green onion, and egg. Mix until combined.
- Season with salt, pepper, crush red pepper and worcestershire sauce, to your preference. Mix until combined.
- Evenly spread 1/2 of meat mixture into a prepared meatloaf pan, leaving about a 1/2 inch border to seal cheese in the meatloaf. Add sliced aged cheddar. Add remaining meatloaf mixture on top.
- Bake in the oven for 25-30 minutes at 350 degrees.
- Meanwhile, make your ketchup-sriracha topping (instructions below).
- When there is about 10 minutes remaining, heat a cast-iron pan over medium-high heat.
- After the meatloaf is done baking, remove from the oven and sear in cast-iron pan on both side. Put the oven setting on broil.
- After meatloaf is seared, put on a baking sheet then add the ketchup-sriracha topping. Broil for approximately 5 minutes.
- Allow meatloaf to rest for another 5 minutes before slicing into it.
- Ketchup-Sriracha Topping
- Mix ketchup, sriracha, worcestershire, salt and pepper.
