Aunt Sharon’s Oatmeal Cookies
Ingredients
- Oatmeal Cookie
2 cups butter (room temperature)
2 cups brown sugar (1lb box)
2 cups white sugar
2 teaspoons vanilla extract
4 eggs
3 cups sifted flour
2 teaspoons salt
2 teaspoons baking soda
6 cups quick cook oatmeal
- Icing
5 tablespoons flour
1 cup milk
1 cup butter
1 cup sugar
1/4 teaspoon salt
2 teaspoons vanilla extract
Directions
- Oatmeal Cookie
- Preheat oven to 300 degrees.
- Cream butter and sugar. Stir in vanilla. Add eggs on at a time.
- Stir together dry ingredients. Add to egg mixture.
- Add oatmeal.
- Bake at 300 for 15 minutes.
- Icing
- Heat milk and flour until thickened. Stir often while cooking.
- Cool completely. This is very important or the icing will seperate.
- Cream butter and sugar in mixing bowl.
- Mix cooled milk/flour mixture into butter and sugar.
- Add vanilla and salt. Mix until smooth.
- Assemble Oatmeal Cookie Sandwiches
- Add desired about of icing to an oatmeal cookie, then top with another oatmeal cookie.
Notes
- May need to make two batches of icing to each batch of cookie mixture, depending on how much icing you desire in each sandwich.
