Aunt Sharon’s Oatmeal Cookies

Ingredients

  • Oatmeal Cookie
  • 2 cups butter (room temperature)

  • 2 cups brown sugar (1lb box)

  • 2 cups white sugar

  • 2 teaspoons vanilla extract

  • 4 eggs

  • 3 cups sifted flour

  • 2 teaspoons salt

  • 2 teaspoons baking soda

  • 6 cups quick cook oatmeal

  • Icing
  • 5 tablespoons flour

  • 1 cup milk

  • 1 cup butter

  • 1 cup sugar

  • 1/4 teaspoon salt

  • 2 teaspoons vanilla extract

Directions

  • Oatmeal Cookie
  • Preheat oven to 300 degrees.
  • Cream butter and sugar. Stir in vanilla. Add eggs on at a time. 
  • Stir together dry ingredients. Add to egg mixture.
  • Add oatmeal.
  • Bake at 300 for 15 minutes.
  • Icing
  • Heat milk and flour until thickened. Stir often while cooking.
  • Cool completely. This is very important or the icing will seperate.
  • Cream butter and sugar in mixing bowl.
  • Mix cooled milk/flour mixture into butter and sugar.
  • Add vanilla and salt. Mix until smooth.
  • Assemble Oatmeal Cookie Sandwiches
  • Add desired about of icing to an oatmeal cookie, then top with another oatmeal cookie.

Notes

  • May need to make two batches of icing to each batch of cookie mixture, depending on how much icing you desire in each sandwich.
